Miners Mix Jalapenos:
Blend one package of Miners Mix OMGarlic! Cheese Spread Mix with one 8 oz softened package of cream cheese or Neufchâtel cheese. Remove stem from jalapenos and slice in half lengthwise. Remove seeds and membranes holding seeds. Fill split chiles with cream cheese/Miners Mix spread. Place filled chiles on grill and cook at about 325 until the bottom begins to show dark or golden brown and filling is soft. Remove from grill, let cool for a few minutes and eat greedily with a good beer at hand!

Grilled Pineapple:
Fresh Pineapple tastes best for this. Remove skin from pineapple and slice into about ½" slices. Place directly on grill and sprinkle with Miners Mix Wholly Chipotle Seasoning and Rub. Grill until the slices begin to turn golden brown.

Miners Mix Chorizo and Eggs:
Blend 1 package of Miners Mix Carne Asada Marinade/Chorizo Mix with 1 lb ground beef (at least 20% fat) as directed on package. Cook about ¼ lb of chorizo in a skillet. Add 3-4 eggs (more or less) and scramble until mixture is cook through. Spoon egg/chorizo mixture into heated tortillas and add your choice of cheese, beans, rice, tomatoes, avocado, or anything else you might want to put in there, fold up and enjoy!

Mexican Au Gratin
To make a Mexican Au Gratin potato dish stir in about ¼ lb of uncooked chorizo to a blended box of au gratin potatoes. Bake as directed on the box.

Mexican Meat Loaf
Use your favorite meat loaf recipe but only make about half the normal size. Before baking, spread meat loaf mixture out in a thin rectangular layer 8" wide for an 8" loaf pan. Spread a thin layer of Miners Mix Chorizo on top of the meat loaf mix. Spread a thin layer of refried beans on top of chorizo, then a layer of shredded cheese (jack and cheddar seems to taste the best). Roll the meat loaf up jelly roll fashion and place into the baking dish, seam side down and bake until done.

Miners Mix roasted Cauliflower
Heat the oven to 400 F. Line a baking sheet with foil. Spray lightly with PAM.
Carefully cut out the core of each head of cauliflower, then cut the heads into small florets. Place the florets in a large bowl and drizzle with the olive oil. Toss to coat evenly. Sprinkle with about 2 teaspoons of Miners Mix Steak and Veggie Rub plus 1 teaspoon of salt, tossing to coat.
Arrange the florets in a single layer on the prepared baking sheet. Roast for 30 minutes, then rotate the tray in the oven 180° and roast for another 30 minutes, or until the florets are deeply caramelized and golden.
